The shape of this typical chorizo sausage is often elongated, thin and folded. It is seasoned with salt and a variety of paprika. This is what gives it its rust color and slightly fruity taste. It is a product that dries quickly (except that of Maison Cisson!) , so it must be consumed quickly.
